Anyhoo, here’s my chaotic attempt at publishing a recipe to the internet. I’m no professional journalist, but hey- I didn’t use AI for any of this, so there’s that! 😎
This is bacon wrapped meatloaf.
It is not healthy. It is absolutely an indulgent, fatty, savory treat that will also spike your bloodsugar. I don’t cook this very often, but when I do, it is guaranteed to hit. 💯 I don’t have any heartwarming story about how some ancestor taught me how to make this or anything like that. I just kinda threw it together with basic meatloaf knowledge and the result is pretty good, so here it is! Apologies for not having pictures at every step, I wasn’t anticipating writing a recipe the last time I cooked it. Might update it later the next time I do. 🤷♀️

INGREDIENTS:
- 1lb ground beef (ground chicken or turkey also works, but makes a mushier meatloaf)
- 8pc thick cut bacon (any variety, maple is good for sweet kick)
- 1/2 yellow onion, grated
- Worcestershire sauce (about 2 tbsp, but I just kinda eyeball it)
- Sweet Baby Ray’s original BBQ sauce (about ¼ cup, plus extra for brushing over the top)
- 1 egg
- 1 cup italian seasoned breadcrumbs (add more if needed, definitely if you use ground chicken/turkey)
- Montreal steak seasoning (about 2 tbsp)
INSTRUCTIONS:

Preheat oven to 350 degrees
Mix together all ingredients except for the bacon into a large bowl, then transfer to a baking pan or onto a sheet pan and form into a loaf. Ground chicken/turkey will make a blob, I recommend putting that into a bread loaf pan. Brush the top with some BBQ sauce and put the bacon on top in a basket weave pattern. Don’t put more BBQ sauce on the bacon just yet. Put that bad boy into the preheated oven for about 30 minutes.
Take the meatloaf out of the oven and carefully drain any excess grease, then put some aluminum foil lightly on top to keep the bacon from overcooking, put it back in for about 20 more minutes and check the temperature. Once it reaches an internal temp of 160 degrees, take the aluminum foil off, drain more grease if needed, brush the top of the bacon liberally with more BBQ sauce, and put it back into the oven for another 10 minutes to caramelize a bit. That’s it, you’re done! It goes really well with some good ol’ fashioned homemade mashed taters. This recipe works great for larger portions as well, I’ve cooked a 3lb loaf this way, just need to cook it longer and triple the amount of ingredients.

You can also get fancy and make a special spooky mummy meatloaf by arranging the bacon to look like bandage wrappings and using onion pieces to make teeth and spooky milky white eyes! All the instructions are the same, you just have to be a bit crafty. I served this on a bed of mashed potatoes, cooked separately of course.
